Rwanda : Cassava and sweet potatoes flour, Rwanda’s favorite source for cakes and biscuits
The flour of cassava and sweet potatoes can be used in making cakes and other foods made from wheat flour like biscuits and cookies, this research was done by Rwanda Agriculture Board (RAB) Rubona Branch as Christine Mukantwari one of the researchers in this center explained.
In 2003, people harvested many sweet potatoes and failed to make them productive and could throw them away, this center was left with a challenge to provide a solution to these farmers who had enough produce that couldn’t even get market at one time and the nest time they are in total poverty.
With this challenge, the idea was developed and the research that was conducted proved that with 40 percent of sweet potatoes or cassava flour mixed with 60% of wheat flour, cakes, cupcakes, biscuits and cookies can be made.
Mukantwari said that it is very important for many Rwandans to start researching in how to preserve food that gets spoiled quickly like vegetables.
The Kinazi cassava plant in Ruhango was built due to the researches by RAB who found out that cassava flour can be preserved and be good to people’s health. RAB is hopeful; that with the researches done by these centers and all Rwandans, ways to preserve vegetables will be found.
When researchers find out about something, it necessitates willing entrepreneurs to carry out their research results for researchers to start on a new project. Entrepreneurs to work on these new findings are yet to be got.
