Sweet potatoes farmers in KOTEMU cooperative in Bahimba swamp Rulindo District have come up with more uses of yellow sweet potatoes other than cooking them, but can even make delicious doughnuts and cakes out of them.

Beatrice Nyirahabimana a cooperative members says “we started farming yellow sweet potatoes with the main objective of making doughnuts and when we get enough produce we sell outside the company like to Sina Gerard Company.

Helena Mukamurenzi a member of KOTEMU cooperative say that these sweet potatoes are utterly productive but the limitation is lack of enough space to grow them as they cultivate them in rented farms.

Tasting Doughnuts made of local yellow sweet potatoes can be joyous

When these sweet potatoes are ready to be harvested, about 50Kgs can be harvested in one week, they sell some in local markets and some at Sina Gerald’s enterprises and use the remaining to make doughnuts and cakes.

Members of KOTEMU went on to say that apart from using the yellow sweet potatoes for doughnuts and eating them, they cure eye problems as they are very nutritious especially in Vitamin A just like Helena Mukamurenzi explains.

“Before I started to grow and eating the yellow sweet potatoes, I used to wear specs because of my eye conditions but now that is history and besides I improved financially”

KOTEMU cooperative has about 15 members both men and women and due to their production, the cooperative is indeed promoting its people.
